Dynamics 365 CMK and BYOK are not enough. Encryption happening on the server side means data remains accessible, aka as 'Service Level Encryption'.
On Dataverse, Microsoft doesn't offer an equivalent feature. Only the 5 email profile fields are encrypted in cell with a key, but it's not extensible to other fields, and it's still BYOK rather than HYOK approach.
Let's not confuse SQL Server TDS encryption, also known as database files Storage Level Encryption, which only protects the database file, versus Cell Level Encryption, the one we offer to truly encrypt the data at rest.
